Gourmet Chocolate Chunk Cookies

Cook Time: 32 Mins
Yields: 30 Cookies

Ingredients:
1 Cup Butter Softened
2 Cups Brown Sugar
2 Large Eggs
1 Teaspoon Organic Vanilla
2 Cups Flour
1/2 Teaspoon Baking power
1/2 Teaspoon Salt
1 1/2 Semi Sweet Chocolate Chunks
1 Cup Walnuts or Pecans

Preheat your oven to 350 F.
Stir sugar into creamy butter until light and fluffy.
Add the eggs and vanilla to this mixture.
Combine flour and baking soda and add to mixture.
Toss in chips, nuts and any other ingredients.
Cool your dough for roughly 20 minutes in fridge.
Then drop heaping teaspoons onto a greased cookie tray.
Bake each batch for approximately 12 minutes.

Gourmet Vanilla Blueberry Muffins

INGREDIENTS:

2 cups all-purpose flour 
1 tablespoon baking powder 
1/2 teaspoon cinnamon 
1/2 teaspoon baking soda 
1/4 teaspoon salt 

2/3 cup sugar 
1 large egg 
1 1/2 cups milk or water 
1/4 cup unsalted butter, melted 
1 tablespoon vanilla 
1 cup blueberries 

2 tablespoons sparkling sugar 
or cinnamon crumb topping 

DIRECTIONS:

Preheat oven to 350 degrees. Use a 12 Cup Muffin pan with non stick spray or paper liners. 
Use a large bowl to combine flour, baking powder, cinnamon, baking soda and salt. 
With a large glass measuring cup or bowl whisk together milk, sugar, butter, vanilla and egg. Pour your wet ingredients into the dry ingredients and stir until moist. Add blueberries and bake. 
Scoop the batter evenly into the muffin tray. Sprinkle with sparkling sugar or deluxe cinnamon topping. Place into oven and bake for 15-18 minutes.

Gourmet Cinnamon Rolls

First you will need to mix your dough, don't even start the oven until your dough is all fluffy and ready.

YEAST MIXTURE
1/3 cup very warm water 110 degrees
1 package active dry yeast
1/4 teaspoon sugar


DOUGH MIXTURE

4 cups all-purpose flour sifted
1 teaspoon baking powder
1 teaspoon salt
1/2 cup sugar
1/3 cup milk room temperature

1 tablespoon vanilla extract
6 tablespoons butter melted
2 tablespoons canola oil
2 eggs slightly beaten

FILLING MIXTURE
1 cup brown sugar
1 tablespoon cinnamon
1/2 cup butter melted

GLAZE
1/4 cup butter melted
4 tablespoons milk may need more or less
1 1/2 cups powdered sugar
1/2 teaspoon vanilla extract

Instructions:

In a glass bowl stir together the water, sugar, and yeast.
Let the yeast mixture set for a few minutes until it is foamy.
Pour yeast mixture into a large bowl.

Next add in 1/2 cup sugar, whole milk, melted butter, canola oil, vanilla extract, and eggs. Mix until combined. Mix in salt and baking powder.

Mix in the flour a little at a time, using just enough so that the dough starts pulling away from the side of the bowl. It will be slightly sticky but won't stick to your fingers.
Once dough has formed place the ball of dough into a large, lightly greased bowl.
Cover with plastic wrap and place the bowl in a warm location.
Let sit for 1 hour or until the dough has doubled in size.

Punch the dough down a few times to release the air.
Sprinkle a work surface with flour. Place the dough on the surface and
knead gently and then make a rectangle that is about 1/4 inch thick.
Brush the dough with half of the melted butter.

In another small bowl mix the brown sugar & cinnamon.
Sprinkle on half of your brown sugar mixture. Brush again with butter and finish with remaining brown sugar mixture. Now begin to tightly rolling up the dough. One rolled you will very carefully slice the roll into 1 1/2 inch sections. You will then lightly grease a baking pan and place the cinnamon rolls on the pan. You should cover them and allow your oven to preheat to 350 F.

Baking time is 20-25 minutes or until sides of cinnamon rolls are lightly golden.
While rolls are cooking you can prepare the glaze by combining all glaze ingredients in a bowl until smooth and silky. When the rolls come out you can let them cool for a few minutes and add the glaze.
